Maine Coast IPA conservation campaign

Maine Coast IPA was the first commercially-available beer ever brewed at Fogtown in 2017.

Because our tradition has been to partner with non-profit organizations, host fundraising events and produce special small batch collaboration brews, we were inspired to dedicate Maine Coast IPA, one of our most popular and widely-distributed flagships, to helping conserve the coast of Maine.

A percentage of proceeds from every purchase of this brew will go to a non-profit organization working to protect the beauty and ecology of our coast, while also supporting the needs of the communities who call it home.

The first recipient was Maine Coast Heritage Trust, a nonprofit land conservation increasing access to the coast for everyone, making the coast more resilient to climate change, and supporting coastal communities.

Crafting beverages with integrity

Exploring the flavors of the Downeast Acadia region

We started brewing 5-gallon test batches in 2016, as we converted this space from dusty storage warehouse to production facility & taproom. We now produce over 20,000 gallons of beer per year.

Great beer starts with great water, and Maine is lucky to have some of the best water in the nation. Ours comes from Branch Lake, a beautiful reservoir surrounded by conserved forest. It is remarkably low in minerals, making it ideal for pilsners and other beers with delicate flavor profiles. After carbon filtering it, we sometimes add small amounts of salts like calcium sulphate or calcium carbonate to our brew water to mimic the natural water profiles of historic brewing cities like Munich or Dortmund. This allows us to recreate the subtle, but important, mouthfeel & body of classic European styles.

Fogtown’s brewers are constantly inspired by the unique flavors of the Downeast Acadia region: our Aqua Culture saison features oysters farmed on Deer Isle and pine boughs harvested from Ellsworth’s forests. The seasonal Stud Wall pale ale showcases freshly harvested spruce tips. We make the Winnowing blueberry wine from wild Maine berries that we collect from a local organic farm.

Over the years, we’ve crafted offerings from locally foraged chaga & reishi mushrooms, maple syrup, rhubarb, rose hips and more!

We brew with Maine-grown base malt, & brew with fresh Maine-grown hops, heritage Maine malts, organic Maine oats & spelt, locally-foraged ingredients such as berries, sweet fern, spruce tips, bog myrtle, & whatever else we can dream up!
Beer styles
Right here in Ellsworth, we brew farmhouse ales, saisons, sours, herbed/spiced ales, IPAs, lagers, pilsners, stouts, porters, tripels, any of which might be aged in barrels as part of our barrel program.

Our heritage cider program

Each fall, we gather heritage apples from local orchards: heirloom varietals with names like Black Oxford, Idared, Wickson & Northern Spy. We often harvest after orchards have closed for the season, allowing us to use apples that would otherwise become food-waste.

And along the Downeast coast, we forage feral apples from trees with names unknown or forgotten. These wild trees are the seedling offspring of some bygone orchard or abandoned homestead. Apple seeds have an incredible diversity of genetic material; each seed is unique and might grow into a tree that produces very different fruits from its parent.

A discarded apple core might spawn a new tree whose apples are excellent for cidermaking: wild fruit often impart unique characteristics like tannic bitterness, sharp acidity & curious aromatics. When fermented, these characteristics lend complex flavors and body to our ciders.

Folks have been making cider in this area for hundreds of years, and we make ours in the traditional way, with minimal processing intervention, in order to highlight the terroir, or hyperlocal character, of the Downeast Acadia region. Once pressed, we transfer the cider to oak barrels where it spontaneously ferments with native yeasts present on the fruit. We age it for a minimum of six months before blending & carbonating, often in the pét-nat style, allowing the natural fruit sugars to sparkle the cider after bottling.

Each vintage is unique, as each year’s weather brings variation to the apples we select. Thank you for trying the ephemeral flavors of Downeast Maine!
